Recipe: Sticky Canna-Toffee Puddings

Perfect Sticks and Stoned Puddings

A snapshot of a famous dessert from an undisclosed Montreal powerhouse restaurant was taken late one evening in January, when the chef had gone home early. It’s just about perfect and pairs beautifully with a strong cider. I store any extra toffee sauce in the fridge and use it for days afterwards as a dip for granny smith apples.

Ingredients:

For the pudding:

  • 250g finely chopped dates
  • 6g baking soda
  • 80g beef suet, grated (you can get this from a butcher, but in a pinch bacon fat will do)
  • 125g dark brown sugar
  • 125g light brown sugar
  • 2 eggs
  • 325g self raising flour
  • 6g baking powder
  • A pinch of sea salt

For the toffee sauce:

  • 125g dark brown sugar
  • 125g light brown sugar
  • 250g unsalted butter
  • 250 ml cream
  • generous pinch of sea salt
  • 25g THC-infused butter (see recipe below)

Directions

  1. Butter (heavily) one cupcake/muffin tray.
  2. Preheat the oven to 350F.
  3. Place the dates and baking soda in a bowl and cover with 375ml boiling water. Set aside to cool for 15 minutes.
  4. Meanwhile, blend together the suet and the sugars. Mix in the eggs one at a time, and then fold in the flour, baking soda and salt. Add the dates and the liquid to the mixture.
  5. 3/4 fill the buttered molds with the mixture, cover with foil and bake for 25 minutes. Test with a skewer or toothpick, unmold and serve with toffee sauce (prepared while the puddings are cooking).
  6. Place all the sauce ingredients except the THC-infused butter in a medium saucepan. Heat over a medium-low flame until the butter and sugar melt. Adjust heat to bring to a simmer and cook for 5 minutes or until the sauce is thick. Remove from heat, add THC-infused butter, and stir to blend.

Preparing THC-Oils

THC is oil (and not water) soluble. Because THC escapes at temperatures higher than 325 degrees fahrenheit, recipes must never bring food to higher temperatures, i.e., no deep-fry.

There are two main methods that i recommend for preparing THC oil: The Slow-Cooker and the Double-Boiler method. Other preparations tend to burn either the oil or the marijuana and are not recommended.

Slow-Cooker Method

Place 5g of vaped-marijuana or 2.5g fresh marijuana for every 1/2 cup oil in a slow cooker. Turn on slow cooker at low setting and let sit for 24hrs, stirring occasionally. Strain through a cheesecloth or fine strainer into a mason jar. Store in the fridge.

Double-Boiler Method

Same as slow-cooker method, but using a double-boiler set to low. Check water levels regularly. Please, do not leave the house with an unattended element or burner on.

Yield: About 1/3 cup oil for every 1/2 cup originally added.
